Bacon-Wrapped Chicken

FOOD TYPE: Bacon

COURSE: Main Dish

DIFFICULTY: Intermediate

Ingredients

  • 4 chicken breasts
  • 1 tbsp garlic, finely chopped
  • 2 tbsps olive oil
  • 450g spinach
  • 1 cup feta cheese
  • 12 rashers Garfunkels Streaky Bacon
  • 1⁄2 cup butter (melted)

Method

  1. Preheat the oven to 180°C. Prepare chicken for stuffing (You can either, slice 2 thick chicken breasts in half and make 4, or beat 4 chicken breast until thin and wide).
  2. Cook spinach in garlic and oil on top of stove until done. Add in the feta cheese and mix well. Distribute spinach mixture onto each chicken breast.
  3. Wrap chicken around mixture wrap bacon around chicken breast and secure with tooth- pick.
  4. Place in glass baking dish and pour butter over them. Cook for 30 minutes and serve.
