Understanding the use of MSG
Often a product called MSG (monosodium glutamate) is added to many foods that are consumed daily to increase flavour such as canned vegetables,soups, processed meats and even takeaways. Monosodium glutamate is a salt that contains glutamate – an amino acid present in our bodies that plays a role in metabolism and communication between neurons.
Although MSG is classed as safe, the amount that can be eaten can add up when found in everyday foods. Consuming too much has been known to cause adverse reactions in some people. As glutamate is naturally occurring in our bodies, adding MSG increases this amount and can therefore also increase the risk of side effects.
So why do food companies add MSG?
Monosodium glutamate has the ability to enhance and intensify the flavour of savoury foods.
The additive can also trick the human tongue into thinking a product is high in protein and therefore more nutritious. For example, a can of chicken soup can contain minimal real meat but if MSG is added it will taste as if there is high meat content. Good news for food producers who wish to cut costs.
Avoiding MSG means the real taste and real protein content of food comes through. It makes sense to avoid MSG where possible and seek real food especially for growing families.
